Building the future of the food system
On December 6, we are thrilled to welcome Dr. Justin Siegel to BioInnovation Institute as he will host a ‘Talk at the Square’. During his talk, he will focus on how new technological advances driven by information technology and the biomedical sectors can be incorporated to the existing food system to create products that lead people to live happier, healthier and longer lives.
Dr. Siegel will use his own scientific research as a vantage point and provide several examples of how his work can contribute to solve some of the major challenges in modern society. Through his scientific work, he has focused on redesigning naturally occurring enzymes for the degradation of specific proteins, which for example could lead to better methods for C02 fixation – an important tool to decrease the overall green house gas emissions. Furthermore, he will touch upon how a deeper understanding of the relationship between protein sequence, structure and function has led to the creation of several start-ups in both the foodtech and the therapeutic space.
